Hamantaschen is a popular treat during Purim! The dough always works better when I cover it and put it in the refrigerator overnight.
Ingredients
Three large eggs
1 cup granulated sugar
3/4 cup vegetable oil
1/2 cup orange juice
2 1/2 teaspoons vanilla extract
5 1/2 cups all-purpose flour
One tablespoon of baking powder
1 cup fruit preserves, any flavor

Directions
Preheat the oven to 175 degrees C (350 degrees F). Grease cookie sheets lightly.
Mix sugar and eggs in a large mixing bowl. Use an electric mixer to beat until creamy and smooth. Add oil, orange, and vanilla. Mix flour and baking soda; add to batter, stirring until a stiff dough forms. Add more flour as needed.
Roll out the dough to a thickness of 1/2 inch on a lightly floured surface. Use a cookie cutter or the rim of a drinking glass to cut circles. Place them 2 inches apart on the cookie sheets. Place 1 to 2 teaspoons in the center of each cookie. To form three corners, pinch the edges.
Bake in a preheated oven for 12-15 minutes or until the cookies are lightly browned. Cool the cookies on the cookie sheet for one minute. Transfer to a wire rack and let them cool completely.
