How to make Beet Relish

The idea is simple: cubed beets tossed with salt and cumin, smoky, are then roasted to tenderness and lightly caramelized. This makes them sweeter and reduces some of their earthiness.

We then add some lime juice and zest for acidity, as well as maple syrup, to bring out the natural sweetness of beets. Mix all ingredients, and you’ll have a tasty relish.

Beets have many health benefits.

Have you ever wondered why beets are so vibrantly red? Plant pigments known as betalains are responsible for the vibrant red color. Not only are betalains beautiful, but they also contain antioxidants as well as anti-inflammatory properties.

Researchers have also found that beets are:

  • Healthy blood pressure
  • Increase nitric-oxide production to support cardiovascular health
  • Protect your DNA from damage
  • Support healthy inflammation

Origins of Relish

Many Americans associate relish with a chunky pickled sauce that is commonly served on hotdogs.

It’s believed that relish was created before the advent of that version. It is thought that the sauce was inspired by the Indian condiment Chutney.

  • The original recipe calls for two large or three smaller beets.
  • Avocado oil 2 tsp (see note for oil-free alternative)
  • 1/4 teaspoon sea salt
  • Add more cumin to garnish if you like.
  • Maple syrup – 1-2 teaspoons
  • 1/2 tsp lime zest
  • Use 1-2 tablespoons of lime juice

IF SERVING optional

  • Fresh cilantro

Instructions

  • Heat the oven to 375°F (190°C) and line your baking sheet with parchment.
  • Add the cubed, peeled beets, avocado oil, cumin, salt, and cumin to a medium-sized mixing bowl. (See notes for an oil-free alternative.)
  • Roast beets in the oven for 35-40 minutes or until they are fork-tender and caramelized. Toss them once after 20 minutes to ensure an even bake. The longer you bake them, the more caramelized and tender they will become. But be careful not to overcook or burn them, as they could become tough and crispy.
  • Add the roasted vegetables to your mixing bowl and add maple syrup, lime juice, and lime zest. Mix. Add more maple syrup or salt to taste. If you need more acidity in the dish, add more lime juice. If desired, garnish with fresh cilantro.
  • Use immediately on our Black Bean Bowl with Roasted Plantain. Cover and store in the fridge for up to 4 days. Add a little more lime juice, water, or olive oil to the beets if they get too dry in the refrigerator. Not freezer-friendly.
