
My mother, my younger sister, and my mother-in-law are all women I look up to. They are all strong, independent women who have found a work-life balance that many of us struggle to achieve.
Women’s Day is approaching, and I’d love to share a little with you to honor all the influential women in our lives and say thank you.
This little hamper contains some of my favorite things to cook with. Each of these products has been tried and tested by me. The hamper includes a packet of Delverde’s Shell Pasta, Real Thai’s Rice Paper, Under-the Mango Tree’s large jar of Litchi Honey, Real Thai’s Red Curry Paste, and Mussard Relish.
Can I end this post without sharing a recipe? To keep with the theme, I will share one of my mom’s recipes with you. My mum is a fantastic cook, and we love everything she makes. It was difficult to choose because it was so hard. This Gulab Phirni is a huge crowd-pleaser. This Gulab Phirni is easy to make and doesn’t take much effort. The rose petals in each bite will keep you coming back for more.
Ingredients
1/4 cup rice + 1 tbsp
1 Liter of full-fat milk (Skim milk is just not enough)
Saffron and Kesar
1/4 Cup Sugar + 1 tbsps
2 tbsps Rose Petals Dried
Pistachios Chopped, and Almonds for Garnishing
Instructions
- Let the rice soak in water for at least half an hour. Once the rice is done, drain the water and grind it in a blender until it becomes a coarse meal. The grains should feel rougher than semolina and grittier between your fingers.
- Bring the milk to a simmer, and then add the rice and saffron, whisking constantly. This will prevent lumps.
- This mixture should be brought to a boil. Whisk the mixture until it is smooth. The flame should then be lowered to a simmer. Continue stirring the mixture every few minutes.
- The mixture should thicken within 20 minutes. Simmer for 20-25 minutes until the mixture thickens, and the rice becomes fully cooked.
- Mix in the sugar until it dissolves. Let the mixture cool down on the flame. Transfer the mixture to a mixer-grinder and pulse for 5 seconds. This gives the phirni a creamy texture and helps to remove lumps.
- Add the rose petals and mix well. Sprinkle with rose petals, chopped almonds, and pistachios. Allow cooling in the refrigerator for at most 2 hours. Serve cold.
