This recipe for caramelized onion chicken takes very little time and is easy to prepare. The dish doesn’t require any gravy. Instead, the onions are cooked in the juices from the chicken and become soft and sweet.

While we were making plans for where to watch the Finals on Sunday, I was already thinking about game-day snacks. The Men in Blue tried their best to stay on the pitch, but it was all downhill. I nearly cried. We were all devastated.

Sometimes, even for someone like me, cooking seems like it could be more appealing. After a quick snack, we headed back to our home. Hunger stuck again. It was more like cravings at midnight. Okayaaaay, I know it was 10:10 PM, but going to bed on an empty stomach is not something that I like. Midnight snacks, which I prefer to refer to as snacking after 9 PM, are excellent.

This chicken is one of my favorite I-don’t-have-energy-so-lets-throw-everything-in recipes. It’s okay because ghee is excellent for your body; you get all that protein from the chicken, and it takes less than half an hour to come together. The onions are sweetened and almost melt around the chicken. Although I might not sell it well, you can trust my recommendation.

Ingredients

1/2 kg Chicken, bone

Two tablespoons of Ginger Garlic Paste

Salt to Taste

One tablespoon of Lemon Juice

One tablespoon of Ghee/Clarified Butter

2Cinnamon small sticks

2 Bay leafs

5 Cloves

8-10 Peppercorns

2 Green Chillies, cut lengthwise

3 – 4 Onions large, sliced

Instructions

  • Marinate the chicken in ginger, garlic paste, salt, and lemon juice. While you cut the onions, keep the chicken aside.
  • After the chicken has marinated for at least 15-20 minutes, heat the ghee in an oven-proof pan. Add the bay leaf cloves, cinnamon, bay leaf, and peppercorns. Your kitchen will be filled with the beautiful aroma of all the spices in about 30 seconds.
  • Then, add the green chilies and onions. They don’t need to be fried or sauteed. Layer them on the bottom of a pan, then layer the chicken over it. Avoid stirring too much.
  • Cover the chicken with a lid. Cook for 20-25 minutes. Halfway through cooking, turn the chicken over. Once the chicken is cooked to your liking (around 20 minutes), remove the lid and let the water evaporate.
