Ingredients

These ingredients are needed to make portokalopita/Greek orange cake.

Step 1 – Make the syrup.

Bring all syrup ingredients (water, orange juice, sugar, orange zest, cinnamon stick, and sugar) to a pot. Allow simmering for approximately 5-7 minutes. Allow it to cool.

Step 2 Stack the filo accordion-style, and place it on a baking sheet.

Step 3 – Heat the oven to 210degF/100degC. Dehydrate the filo for approximately an hour until it is dry. Set it aside for a few minutes to cool.

Step 4 – Prepare the batter for the portokalopita. Begin by mixing the eggs and sugar in a bowl. Continue beating for approximately 8-10 minutes with a hand mixer.

Step 5 Add the oil, butter, vanilla, yoghurt and baking powder to the bowl and stir for 10 seconds.

Step 6: Use your hands to break down the filo/phyllo.

Step 7 Add the flour to the batter in 4-5 batches. Use a spatula to mix each batch lightly.
